Coral Deira Dubai Shines Again at the MLA Black Box Culinary Challenge

Coral Deira – Dubai team, comprising of two chefs and four service staff, won the Bronze medal in the Black Box Culinary Challenge at the Joharah Ballroom at Madinat Jumeirah earlier this month.
Teams of young chefs from 15 five-star Dubai hotels competed in the MLA Black Box Culinary Challenge, which is supported by the Emirates Culinary Guild and the World Association of Chefs Societies. The main sponsors, Meat & Livestock Australia (MLA), have successfully organized over seventy-seven Black Box Competitions in the Asian region since 1996. Four global finals have been held sequentially in Singapore 2000, Kyoto Japan 2002, gold coast Australia 2005 and Dubai 2008. The 5th global final is scheduled for Korea in 2012. |

According to the MLA Black Box Culinary Challenge competition rules, the teams were given one hour to create a four-course menu based on a black box of mystery ingredients, which was revealed only on the morning of May 31st. The ingredients included Australian beef and lamb, and other ingredients from international and local foodservice companies sponsoring the event.
